Day 7

Em and I needed to get out of the house. 3 nights with not much sleep = play outside all day and wear ourselves out and hopefully pass out for a full night’s sleep. It was a great day outside where we are and we spent half of the day just exploring our little forest around our house. Not only is getting out good for exercise, but it helped my mental state more than anything. A little fresh air and sunlight does a body good.

Even in these winter months, you can more than benefit from a little sun exposure. I’m sure you know all too well the benefits of vitamin D for your health.

Vitamin D benefits:

  • regulates calcium and phosphate levels in the bloodstream
  • it works with calcium, vitamin A and vitamin k2 to promote mineralization and growth of bones
  • plays a huge role in immune response
  • there is a link between vitamin D deficiencies and most cancers
  • it reduces inflammation

So get some fresh air and just relax and soak up the winter rays. Here is what today looked like in the kitchen…

We made another trip to the farm for our milk and some more grass-fed beef and pork. I also have beef stock simmering on the stove – here is the chicken stock, but the beef is very similar – look for a post on that soon – and am making yogurt from raw milk (I’ll let you know how that goes!). I feel very primal today!

Breakfast – 3 Scrambled Eggs & black coffee

Lunch – finally finished off the butternut squash lasagna from the end of last week & I had a handful of almonds, couple slices of local cheese, and a few dried dates.

Dinner – Soy glazed salmon (sounds fancy, but I just marinated the salmon in soy sauce and a little pepper and cooked on the stove top), fresh green beans, sauteed turnips

Almond meal cookies (without the brown sugar and about half as many chocolate chips)

Almost 1/3 of the way there!
