Who doesn’t love popsicles on a HOT summer day like we’ve been having here in the South? My kids sure do! But just because it’s summer doesn’t mean I get lax about what food we eat. I want them to enjoy the great, fun things about summer foods without all the nasty ingredients.
You want to treat your kids (and yourself) to a cool treat on the HOT summer days, so you walk into your local grocery store and scan the frozen section looking for some delicious popsicles. You see one labeled, “natural”, “all fruit” and think, this must be great and healthy! But then you look at the ingredient list and are horrified:
Strawberry: Water, Strawberries, Sorbitol [Sensitive Individuals May Experience a Laxative Effect from Excess Consumption of This Ingredient], White Grape Juice from Concentrate (Water, White Grape Juice Concentrate), Maltodextrin, Glycerin, Polydextrose, Natural Flavors, Ascorbic Acid (Vitamin C), Beet Juice Concentrate (Color), Citric Acid, Sucralose (Splenda Brand), Acesulfame Potassium, Guar Gum, Turmeric Color, Carob Bean Gum. [from a real ingredient list for a “healthy” popsicle]
How can something so simple be so messed up?! I want to teach my kids where real food comes from, that it doesn’t have to be complicated and can be fun. A great way to involve your kids and make it a learning experience is to go pick your own berries to use in the popsicles. We have a bunch of wild blackberry bushes around us so we went picking and they learned (1) how hot it is in June in the south (2) that blackberry bushes have thorns (3) how rewarding it is to fill up a basket with berries that THEY picked (and ate ;))!
Here is my super simple, delicious popsicle go to and my kids LOVE it!
1 cup Kefir, yogurt, coconut milk, etc.
1/2 cup orange juice
2 heaping cups spinach
2 cups berries
Simply place the liquids in the blender followed by the spinach. Blend very well, then add the berries and blend. Pour into molds and freeze a couple hours. It’s that simple! And it’s a great way for your kids to help you out in the kitchen too!
