We made it to day 21! 21 days no grain, no more than 2 teaspoons of sugar per day, no wheat, no cheats. Here’s what day 21 looked like in our kitchen…

Breakfast – scrambled eggs and black coffee

Lunch – chicken salad on a mixed green salad with roasted vegetables. My daughter and I were gone all day to the big city and I met a friend for lunch and I was surprised to find this great lunch option while eating out. The roasted vegetables were really good too (broccoli, carrots, and red onion), not the bland steamed veggies that are normal fare.

Mid-afternoon snack – banana and almond butter

Dinner – A HUGE bowl of Homemade Beef Stew. I was so hungry after traveling all day that when we got home and I put my daughter to bed, I made the biggest bowl of beef stew ever and it was delicious.

Now what happens? My main goal for the 21 day challenge was to set a clean, natural, healthy eating framework for the New Year. Goal accomplished. Tomorrow and the days after, I will continue to eat clean, natural, healthy foods that are going to fuel my body well. How will I do this? For me, I choose to eat unprocessed, whole foods because I know that’s the way God designed my body to function best. I feel better when I eat better. That’s not to say that I will NEVER falter and have that, “I really should not have eaten that food” moment. However, I know how my body functions when I eat well so when I don’t, there is no excuse. Nobody’s fault but my own.

I don’t ever call our way of eating a “diet” because a diet is something that you can only maintain for a period of time. We choose to eat only good foods because it tastes better, makes us feel better and ultimately we know it is how we were designed to eat.

And finally, our primal journey is one that is 2 years in the making. I don’t want to ever give people an overwhelmed feeling, but simply share what we are learning. If you feel overwhelmed, just step back and resolve to make one change in your life and go from there. Whether it’s cutting out that nightly bowl of ice cream to 3 nights a week or totally cutting out processed food all together. Everyone has different capacites, motivations and goals.
