soup

So the picture above is not my finest photography skills, but you get the idea. It was good enough to take a picture of and put on my blog, so it’s definitely good enough to try! I love it when I find new soup recipes, and this one is a winner. I took the basic recipe from Ina Garten here and did a little personal tweaking of my own. Hope you enjoy as much as I did!

Ingredients

  • 2 medium sized butternut squash, peeled and diced into 1-inch cubes
  • 2 onions, chopped
  • 3-4 tablespoons olive oil
  • sea salt and pepper, to taste
  • 2-4 cups of chicken stock (I actually used beef broth since I had some made already)
  • 1/2-1 tablespoon curry powder (I really like curry, so you can add as little or as much as you like)
  • 1 pound ground beef, cooked

Toss butternut squash and onion with olive oil, salt and pepper and roast in the oven for about 45 minutes, or until very tender, on 400 degrees. Once vegetables are tender and cooked, place vegetables in batches into a blender or food processor with a little chicken (or beef broth) until you have a thick soup. Pour soup mixture into large stock pot and continue with the rest of the vegetables.

I used a blender to do this and it worked just fine. I liked how the blender gave it a little chunkier texture. I’ve made butternut squash soup before and didn’t like it because it was too smooth. This recipe is great because you can add as much texture (ie: as much chicken broth) as you want to achieve your desired taste. The curry powder adds a little something extra as well.

Add cooked beef to soup while heating or at the end. Top with fresh shredded cheese, chopped green onion, toasted nuts or toasted coconut flakes.

We made another trip to our local farm today and got these beautiful colored eggs. Not only do they taste great and so good for you, but they are so pretty! Here’s what today’s menu looked like:

Breakfast – 2 scrambled eggs, 1/4 avocado, black coffee

Lunch – leftover spaghetti squash with marinara & a mixed green salad w/ radishes and balsamic vinegar

Dinner – Butternut Squash Soup with Ground Beef – I added a little fresh, shredded, jalepeno cheese on top as well, so good!
