I mentioned this version in my almond banana pancakes recipe, but here is the official pumpkin pancake recipe. Because it’s the beginning of Fall and we all love paleo + pumpkin + pancakes, you should put them all together and get this incredible breakfast (or anytime) treat. These ‘pancakes’ have a slightly different texture than their regular wheat counterparts, but personally I like them much better. These actually have a flavor by themselves, where regular pancakes have to topped with sugary syrup to taste like anything. So, here’s to a better tasting, simple, nutritious pancake.
Ingredients
- 1/2 banana, mashed
- 1/4 cup pumpkin puree
- 1 egg
- 1 Tablespoon almond butter
- 1/2 teaspoon (or more) pumpkin pie spice
- butter (to cook with and to top)
- Honey, maple syrup, and/or walnuts (optional topping)
This makes one serving (4 pancakes). I usually multiply the ingredients by the number of people that will be eating them and usually end up with a couple left over for a snack, the next morning or easy travel food for Emma.
Directions
- 1. Heat skillet on low-medium heat. While skillet is warming, mix all ingredients until well incorporated.
- 2. Once skillet is warmed, add a little butter and spoon/pour out like you would regular wheat pancakes. Note: because these have so much more substance, allow for a few more minutes cooking time compared to regular pancakes.
- 3. Top with butter, cinnamon, honey, walnuts and/or pecans and enjoy!

So excited! Making these in the morning. I tried them the other day and found that I needed to add a little water since my pureed pumpkin was pretty thick.

Hey ok so once you posted the official recipe, I made them and they turned out great. The first time I did 1/3 cup pumpkin and 1/3 cup banana, and since pumpkin is thicker than banana they were too thick. Also, the first time I used some organic pumpkin which was thicker than the Libby’s which I normally use.
I did add 1 tsp of flaxseed to these last time I made them and it was really good actually. It added a little crunch, and I don’t find many ways to eat flaxseeds, so I felt like it was a good option! Maybe I’ll do walnuts next time.

Hey Hannah! I have been wanting to ask you what y’all do for thanksgiving. I have been trying to think of traditional recipes that I could primal-fy. So far, all I have is mashed butternut squash (Barefoot Contessa has an AMAZING recipe) and sweet potatoe casserole. I’m sure I could make do with that and a side salad as my sides, but just wondered if you had any good ideas?
Also, I think I may have found the ultimate “primal” dessert haha! I know it would be a cheat/treat but- no flour! No sugar even…(except what’s already in the chocolate). What do you think? http://thepioneerwoman.com/cooking/2012/02/pots-de-creme-a-lorange/

For holidays, especially if someone else is cooking for us, we typically just eat whatever they have (in moderation) and choose wisely to eat the best paleo/primal meal possible.

Ok so update (continuing this rather ridiculous thread of comments under this post 😉 One morning I got the bright idea to separate the eggs for these pancakes and then beat the egg whites to firm peaks, then fold them in, as if you are making a cake. It may be more trouble than you are willing to take, but I really think it improves the texture. When you make them this way they taste more like regular pancakes. Just wanted to share!

I’ve also substituted one egg with flax seed meal and it makes the texture more like regular pancakes.
