Dinner: Roasted chicken with cauliflower “rice” and veggies. On the suggestion of a friend, I tried cauliflower as rice and it was great and had a very similar texture to rice. It could not be more simple – put cauliflower in a food processor to form “rice”, microwave in a microwave safe bowl for 4-5 minutes and done! You don’t even have to add water since the natural moisture in the cauliflower makes it nice and tender. Here is the video I watched to learn the process.

I read several recipes and blogs to find out more about roasting a whole chicken and could not find the perfect way – until recently. Ree Drummond of The Pioneer woman is not primal in her eating, but has some great recipes I’ve been able to ‘primal-fy’, not to mention she is hilarious. One of her guest writers contributed a how-to on roasting a whole chicken. Although I use olive oil instead of the suggested canola oil, the secret to a perfectly roasted chicken is just what he says: patting the chicken dry and stuffing with onion and lemon. It is perfectly crispy on the outside and perfectly juicy on the inside!
